Rye is a grain extensively used in the Nordic countries. In his article “Rye: Nutrition, Health and Functionality” published on ryeheart.com 07/01/1999 Herman Adlercreutz quotes studies undertaken by Hansen et al in 1988 which demonstrate that rye-based foods can help prevent constipation due to the nature of their fibre. Rye may also be important in helping weight control - Herman Adlercreutz reviews studies undertaken by Wisker et al 1996, which note that rye: “fibre may decrease the availability of dietary energy”, this could help control body weight.

We use the sourdough method of baking in the preparation of Wellness Multi-grain This method, traditional to the Nordic countries, enables sourdough yeast to grow and release unique flavour compounds. Other nutritious ingredients are added and the bread slow baked in mild heat to insure a thick tasty crust .

The science of oat bran

Oat bran, used in Multi Grain Wellness bread, has been the subject of over thirty years’ research in thirty-seven clinical studies, reviewed by the United States Food and Drug Administration (FDA). Based on this review, the FDA allowed the first health claim for specific foods: “Soluble fibre from oatmeal, as a part of a low saturated fat, low cholesterol diet, may reduce the risk of heart disease”. The American Heart Association has also accepted the research findings and recommends a total dietary fibre intake to 25 to 30g from foods, not supplements, to maximise the cholesterol-lowering impact of a low fat diet.
